Extraordinary Wheat Berry Dessert (Žito sa šlagom)




This is a very unique dessert. In my home country it is served on very special occasions and it has symbolic meaning. Also, it is served in old traditional bakeries. I was searching the web to find similar stuff in other cuisines but I couldn't...

You can cut measures in half if quantities below seem too much for you.





You need few ingredients to make it:

1 lb wheat berry
1 cup sugar
1/2 cup honey
1 lb ground walnuts
1 teaspoon grated nutmeg
1 teaspoon ground cloves
1 tablespoon vanilla extract

2 cups heavy cream + 1/2 cup powdered sugar

Steps:

Cook wheat berries in water until boil. Drain it and add fresh water. Continue with cooking on low heat until berries become very soft, for about 2 hours. Stir it very often. Drain it again and place on paper towel to dry.

Put cooked wheat berries in food processor and pulse until they become evenly ground. Add sugar and honey, spices and vanilla extract. Add ground walnut too. Mix it well.

In the meantime make whipped cream, using heavy cream and powdered sugar.

Serve the dessert as shown on the pictures. On the bottom goes wheat-walnut mix, and on the top whipped cream.


 

Apart from making dessert you can also make some home decoration with wheat berry. See below how I did it.


You should place dish with wheat berries on some very bright spot in your home and spray it with water several times a day. In couple of days shoots will start to come out.

  2. ee znas da je bolje da zito samo potopis u vodi na 24h, isperes, i pustis 6 sati na suhom da omeksaju.. ja odavno vise zito uopce ne kuham.. a i kuhanjem izgubis sve hanjive sastojke, tako da je potapanje puno bolji nacin.. radila sam tako zito za djurdjevdan..

    1. Ma znam to, i sigurno da je boje, ali za prosecnog Amerikanca to je prilicno komplikovan proces. Idem da vidim sta si to pravila.

Baš smo se pre dve godine pitali ne sećam se tačno kod koga na blogu, možda Zaboravljene poslastic eili kod Maje da li bi žito bio autentičan recept Srbije ili ga možda ima i u ostalim pravoslavnim zemljama. Jednaka količina svega je savršena mera. ja med ne stavljam i imam onaj običaj uvijanja šerpe u ćebe nakon kuvanja da odleži do jutra. Nisma ni znala da se žito tako zove na engleskom. Mnogo mi se dopada novi izgled bloga, tj. ja nekako preferiram belu pozadinu, sve mi blješti i sija sjajno.

    1. Sto se tice imena ono sto bi mi pomislili odmah je ground wheat, a to iskljucivo znaci brasno. Meni se neko vreme vrzmalo u glavi wheat pearls ali onda sam provalila da tako zovu nesto slicno kuskusu. Zatim sam se konacno setila naziva nekih jela iz casopisa, oni uglavnom koriste psenicu u zrnu za salate, pa sam na kraju dosla do ovog naziva. Nekad je stvarno tesko adekvatno prevesti neki naziv sa srpskog na engleski i obrnuto.
      Hvala na komplimentu za novi izgled bloga. To je davna ideja moga muza koji ju je preradio, i naravno napravio gresku u kucanju:)
