Crepes with Nutella



I have been practicing making crepes for the last twenty years or so. This is my best recipe perfected over the long period of time.

You can omit milk and use only warm water as I did while I lived with my parents... my father doesn't like milk or anything with milk. Even made with water the crepes are still fine.

Also, instead of sparkling water you can add more milk. Sparkling water is good to make crepe fluffier.

You can add vanilla extract and lemon juice to get better flavor.

Nutella is my favorite filling for crepes but you can also try jam, jelly, or just ground walnut with sugar - that was very popular filling in the past.



You need for about 18 crepes:

4 eggs
Pinch of sugar
Pinch of salt
11/2 cup milk
1/4 cup canola or vegetable oil + some to grease the pan
2 cups flour
1/2 cup sparking water
1 teaspoon vanilla extract - optional
1 teaspoon lemon juice - optional

Tools:
7" non-stick pan for crepes
1/4 cup ladle
Whisk or electric mixer
Silicone or wooden spatula


Steps:

Beat the eggs. Add salt and sugar, and vanilla extract and lemon juice (optional). Stir in milk, oil and add flour. Mix everything together with the whisk or electric mixer until smooth. Gradually pour in sparkling water to get the right  density of batter. It shouldn't be to thick or too loose.

Heat the pan and brush with oil. I use 7 out of  9 on heat scale to make crepes. Stir the batter, scoop full ladle (1/4 cup) and pour it on the pan. Quickly tilt the pan using circular motion to spread the batter evenly. Cook for 1-2 minutes on one side; when you notice edge of crepe starting to separate from the pan flip the crepe and cook for another 30 seconds or less on the other side to be done. Oil the pan from time to time. You don't want crepes to be dry. Instead of oil you can always use butter if you prefer.

Although you can use spatula to flip crepes, it's much more fun to throw them directly from the pan up into the air and catch them back turned on the other side. These "flipping skills" develop over time so don't be disappointed if at first attempt crepe ends up on the kitchen floor.

Fill crepes with Nutella or any other filling. Roll them into tube shape or fold twice into quarter- circle shape.




Making crepes is so easy that even my kids (1 and 3-year old) can do it.

  4. breakfast, brunch or dessert, I can eat them anytime :) It can go with less oil but they are delicious!
